Without actually watching, my first thought is that a lot of it is the flow and intonation, moreso than actual words and grammar. For instance, I find modern Germanic languages kind of harsh on the ears vs. Romance or Celtic languages. And I love the sound of Mandarin spoken by a native, esp. the way the four tones play in (for those not in the know, a Chinese character can have four ways of speaking it, each with its own meaning). Usual bias alert about me being married to a native speaker of two Chinese languages (Shanghainese and Mandarin) applies.

I don't know but for me is, the more i listen to a language the more sound nice and more beautiful
